Our next Engineering on Tap will feature Professor of Biological and Agricultural Engineering Ruihong Zhang, who is leveraging agricultural byproducts to reduce waste and create new myco-foods — small balls of fungi that can be turned into products like boba and lab-grown caviar. Learn about this innovative research and try caviar samples based on Zhang’s mycelium technology, provided by Davis-based startup Optimized Foods.
