Nanocellulose, comprising cellulose nanocrystals (CNC or NCC) and cellulose nanofibers (CNF or NFC), has evoked considerable interest across diverse industries due to its distinct physicochemical attributes. Within the realm of the food industry, nanocellulose is recognized for its potential utility as a thickening agent, emulsifier, and functionally beneficial dietary fiber. Nevertheless, regulatory sanction remains pending, primarily due to lingering uncertainties surrounding its potential impact on human health. With the support of two USDA grants, Dr. Kong has delved into the digestion of nanocellulose and its potential health implications. In this presentation, he will discuss some of the key findings regarding the behavior of nanocellulose during digestion and its influence on nutrient absorption. These insights contribute to a deeper understanding of nanocellulose, providing valuable data that may facilitate the path toward regulatory endorsement for achieving "GRAS" (Generally Recognized As Safe) status.
